Sliced beef, cherry tomatoes and rocket salad

A fast and delicious main dish! In my opinion it tastes great.

It is not difficult at all, the thing that matters its a good quality meat!

15 oz beef
4 oz cherry tomatoes
4 oz rocket salad
Balsamic vinegar
Garlic
Green pepper
Salt
Rosemary
Extra virgin olive oil

Wash, dry and lay down the salad on a plate. Cut the tomatoes in four and spread them all over the salad. Sprinkle lightly with black pepper. At this stage, do not worry too much about salad dressing as the meat will be very tasty and everyone can directly measure out the amount of salt and olive oil at their wishes.

At the end you should leave salad and tomatoes as dry as possible.

Peel a clove of garlic and cut it in a half. Heat the olive oil in a pan and add the garlic with several green peppercorns and a sprig of rosemary. Make sure that the aromas spread into the oil.

Heat a grilled pan and pour in several grains of salt (I used Himalayan pink salt!!!) then lay the meat making sure it fits snugly and begin to broil on all the lower side.

At this point you need to be creative... Cooking time can vary from 4 to 7 minutes per side depending on your liking (someone likes raw meat and someone wants it well done) and generally make sure that the salt penetrate into the meat without pricking it otherwise it will lose its inner liquids.

When the outside gets the desired color remove the beef and let it rest. With a sharp knife cut it into wide sections wider and arrange it on the salad. Season with the prepared oil, making sure that garlic, pepper and rosemary do not fall on meat. Add a splash of balsamic vinegar glaze and serve.
